DESCRIPTION
Use up your leftover rempah from Laksa goreng to make this easy Laksa Seafood Chowder!
STEPS
- Add unsalted butter into the Ninja Foodi and saute on high until the butter has melted.
- Add in onions, garlic and saute for another 3 to 5 minutes until the onions turn translucent.
- Add in laksa paste then saute for another minute.
- Add in carrots, potatoes, corn and fresh seafood and saute for 2 minutes.
- Season with salt and pepper.
- Cover with the pressure cooker lid then cook on high for 5 minutes.
- Release steam by venting the lid and wait until all the steam has gone.
- Scoop the chowder into ramekins or oven safe soup bowls.
- Cut puff pastry according to the size of the ramekins and soup bowls.
- Brush the puff pastry with egg wash then bake in a preheated oven or airfryer at 180 deg for 10 minutes until the puff pastry turns golden brown.

1 tbsp unsalted butter
1 medium sized yellow onion, diced
4 cloves garlic, minced
Half carrot, diced
2 slices beef bacon
1 potato, diced
2 tbsp laksa paste
200g fresh seafood (I used mussels, clams and scallops)
1 cup corn kernels
Salt and pepper to taste
1 cup heavy cream
1 sheet puff pastry
1 egg, beaten
