Laksa Seafood Chowder

DESCRIPTION

Use up your leftover rempah from Laksa goreng to make this easy Laksa Seafood Chowder!

STEPS

  1. Add unsalted butter into the Ninja Foodi and saute on high until the butter has melted.
  2. Add in onions, garlic and saute for another 3 to 5 minutes until the onions turn translucent.
  3. Add in laksa paste then saute for another minute.
  4. Add in carrots, potatoes, corn and fresh seafood and saute for 2 minutes.
  5. Season with salt and pepper.
  6. Cover with the pressure cooker lid then cook on high for 5 minutes.
  7. Release steam by venting the lid and wait until all the steam has gone.
  8. Scoop the chowder into ramekins or oven safe soup bowls.
  9. Cut puff pastry according to the size of the ramekins and soup bowls.
  10. Brush the puff pastry with egg wash then bake in a preheated oven or airfryer at 180 deg for 10 minutes until the puff pastry turns golden brown.

INGREDIENTS

1 tbsp unsalted butter

1 medium sized yellow onion, diced

4 cloves garlic, minced

Half carrot, diced

2 slices beef bacon

1 potato, diced

2 tbsp laksa paste

200g fresh seafood (I used mussels, clams and scallops)

1 cup corn kernels

Salt and pepper to taste

1 cup heavy cream

1 sheet puff pastry

1 egg, beaten
